In 1531, sparkling wine was discovered by the monks of St. Hillaire Abbey. Ancestral is a stand-alone wine that is based on the original ancestor of sparkling wines, unlike any other method produced in Canada.

The nose of Ancestral will greet you with luscious strawberry and sugared rhubarb. The palate  offers strawberries and cream and candied violets. Enjoy Ancestral on its own or serve it with butter chicken, fresh fruits, or angel food cake for the perfect pairing!
