L’Imparfait Macération is a little project by David McMillan and the Hinterland family.
Maceration is an amber wine from the 2019 vintage. Maceration consists of: Savagnin (21 days skin contact), Gewürztraminer (21 days skin contact), Pinot Gris (11 days skin contact) and Chardonnay Musqué (11 days skin contact).
After a spontaneous fermentation, the wine was aged in neutral barrels for 10 months. This is a big and remarkable wine. Smells like a mid-summer dry wild flower garden with nutty marzipan on the palate. Opulent.
